My story
Since 2021, I have been living and working in Greece, tending my grandfather's olive groves in the village of Toxo. There are 400 mature olive trees there that have been part of our family for many years. In addition, I have planted 300 new olive trees in recent years, which I have been caring for and nurturing myself from the very beginning.
Working on the olive trees is not a project for a few weeks a year, but a year-round task. Each tree is pruned regularly to keep it healthy and allow it to develop well. I make sure to fertilize the trees properly, care for them, and give them the time they need. I am not interested in quick returns, but in sustainable work and consistently high quality.
The olive harvest is a special moment for me every year. Most of the olives are deliberately harvested by hand. I avoid mechanical harvesting as much as possible in order to protect the trees and not compromise the quality of the olives. After harvesting, the olives are processed promptly to preserve their freshness, flavor, and valuable nutrients.
Quality is my top priority in my work. From the olive tree to the bottle, I oversee every step myself. My olive oil is not an industrial product or mass-produced, but the result of a lot of manual labor, experience, and respect for nature. Each vintage is unique and reflects the conditions of that particular year.
What is produced here in the village of Toxo is honest Greek olive oil – grown on traditional soil, carefully tended and produced with the aim of creating a product that I can fully stand behind.
